GETTING TO KNOW OUR SINGLE ORIGIN 

It’s no secret, we love to carefully blend coffees (our name is a bit of a giveaway). But even we have to admit, many specialty-grade coffees are just so tasty and vibrant, there is no need to mess with these gems.

We’ve sourced this delightful natural coffee from Nicaragua through our friends from DR Wakefield.

 
Hacienda Santa Luz - nested in the mountains of Matagalpa - was one of two farms bought as  abandoned lots back in 2003, with a long-term view to re-establishing coffee plantations in a
sustainable way. 
 
This has resulted in not only the replanting of several new and diverse coffee varieties, but also the establishment of a professional organisation. All operations, including export, are handled directly on the farm.
 
105 hectares have been identified as suitable for coffee growing. As a rainforest certified farm, this is not a case of expanding at the cost of the environment. Instead, they aim to increase yield by embracing new higher-yielding varietals, or improved disease resistance.
 
This coffee variety is called “H3”. It is a relatively new hybrid of Caturra and Ethiopian Landrace, developed for its resilience and quality. Nicaraguan farms have been experimenting with H3 lately, often using honey and natural processing to enhance its unique fruity notes.
 
This coffee was processed using the traditional natural method: simply, drying the coffee cherries whole, without the intervention of washing to remove any of the fruit. Prior to drying, the cherries are picked, floated in water, and sorted to remove any under-ripe or overripe fruit.
 
The time invested allows the beans to absorb flavours and natural sugars from the fruit, and shows its results through a bright, vibrant, and fruity cup. 
 
We’ve roasted this coffee to accentuate its best features: balanced, with a mellow tropical fruit acidity, a smooth & creamy milk chocolate body, and an aftertaste of tangerine jam.
 
Enjoy ripe fruit notes, such as raspberry and blueberry, backed by subtle, lavender florals - this coffee is a great option for any adventurous palate.
